Abstract
Steamed cake is a popular type of food. The sweet taste and diverse shapes make it popular with the public. Cassava flour and Kepok banana flour both have a high potassium content which is good for hypertension. Potassium content in cassava flour is 418 mg / 100 gram, whereas in Kepok banana flour is equal to 903 mg / 100 gr. The purpose of this study was to determine the acceptability of high-potassium and low-fat steamed sponge made from cassava and substitution of Kepok banana with wheat flour as an alternative snack for hypertension sufferers.
The method used in this study is a Completely Randomized Design with 3 treatments and 3 replications with a hedonic test with 3 formulations used 0%: 100%, 50%: 50% and 75%: 25% with data analysis using Analysis of Variance ( ANOVA: The variables observed in this study were organoleptic (color, taste, aroma, texture) .This research was carried out in Lama Village, Pancur Batu District.
Steamed sponge products from cassava flour and banana flour were substituted with the best wheat flour based on organoleptic tests, namely in F3 the use of 12.5% cassava flour, and 12.5% Kepok banana flour 75% substitution of wheat flour. For the level of preference in terms of color, texture, taste and aroma of panelists, they really like it, while F1 and F2 were dislike it because of their rather dark colors, harsh texture, and the striking aroma of cassava and Kepok bananas.
It is suggested that this research needs further reaserch to be done by using cassava flour and banana flour to accept high potassium and low fat steamed sponge.
