Abstract
Food and drinks are one of the three elements of basic human needs, food is a source of energy and nutrition for humans to be able to carry out activities. Grass jelly drinks have health uses for use as a cure for diseases, such as lowering heat, treating stomach aches (nausea, diarrhea, constipation, flatulence) prevent digestive disorders, as an anti-cancer and prevent tumors. The way to maintain health is to consume safe food, namely by ensuring that food is clean and protected from disease. Food quality can be seen from the indicators of microbiology, physical, and chemical.
The purpose of this study was to identify the Escherichia Coli bacteria and Salmonella Typhi on grass jelly ice in 12 districts of Medan City. This research method is descriptive using SNI-1992 MPN (Most Probable Number) method.
The results of this study indicate that from 12 samples of grass jelly ice drinks tested there were 4 positive samples contaminated with Escherichia coli bacteria and there was 1 positive sample contaminated with Salmonella typhi bacteria.
The conclusion of this study is that from 12 samples of grass jelly ice drinks there were 4 positive samples contaminated with Escherichia coli bacteria and 1 sample contaminated with Salmonella typhi bacteria regulated by SNI 01-3719-1995.
