Abstract

Soy sauce is very familiar to be used as a food flavor and dining companion. In Indonesia, the soy sauce market is quite large and has a tendency to increase from year to year. This research aimed to determine the physical state by using organoleptic test and the presence of Eschericia coli by using Most Probable Number method (MPN), the presence of mold by using Mold and Yeast Number method, and the presence of sodium benzoate by using FeCl3 5% method and Spectrofotometry UV-Visible method in 5 different brands of kecap manis kiloan sold in Sei Sikambing Market. The research result showed that all samples had a typical normal physical state and Most Probable Number were <3 MPN/g. Then the result of Mold and Yeast Number in each sample were sample I was 10 colony/g; sample II was 5 colony/g; sample III was 60 colony/g; sample IV was 65 colony/g; sample V was 55 colony/g. Then all samples contain sodium benzoate marked by reddish brown sediment with FeCl3 5% addition. And sodium benzoate levels in each sample were sample I was 166,89 mg/kg; sample II was 111,99 mg/kg; sample III was 131,63 mg/kg; sample IV was 57,16 mg/kg; sample V was 63,87 mg/kg. Based on these research results can be concluded that sample I and II are fulfilled the requirements while sampel III, IV, and V are not fulfilled the requirements of Soy Sauce Quality Standards based on SNI 01-3543-1999.
