Abstract

Lettuce (Lactuca sativa L) is a horticultural commodity that is consumed by many people. Lettuce is rich in antioxidants such as beta-carotene, folate and lutein and contains indole which has the effect of protecting the body from cancer. The content of natural fibers can maintain the health of digestive organs. The purpose of this study was to identify the bacteria of Escherichia coli and Salmonella typhi on fresh lettuce at Minang Restaurant on Jalan Melati Raya in Medan.
This research method is descriptive using SNI-1992 Most Probable Number (MPN) method. This method consists of three stages of testing, namely the presumptive test, the confirmed test, and the complete test. The main principle of the MPN method is to thin the sample to a certain degree so that a suitable concentration of microorganisms is obtained. If it is planted in a tube, it is produces a positive tube growth frequency to show the existing bacteria that are indicated by signs of gas in the durham tube.
The results of showed that of the eight samples tested, there were 2 positive samples, C sample and E sample, contaminated with Escherichia coli bacteria and none of the eight tested samples were contaminated with Salmonella typhi bacteria.
The conclusion shows that from eight lettuce samples there were two positive samples contaminated with Escherichia coli bacteria and none of the lettuce samples contaminated with Salmonella typhi bacteria were regulated in SNI ISO 21527-2: 2012 regulations.
