Abstract

Black pepper (Piper nigrum L.) contains a number of minerals such as potassium, calcium, zinc, manganese, iron, magnesium, and vitamins, piperin as the main component of alkaloids contained in pepper, besides acting as an antioxidant it also has anti-hypertensive activity. Black pepper is spicy and very special flavor. One of the chemicals contained in black pepper is essential oil.
The purpose of this study was to determine what types of compounds contained in the essential oils of black pepper (Piper nigrum L), from Takengon. This study used qualitative experimental methods in the laboratory. Isolation of essential oils of black pepper was done by the steam distillation method. Identification was done by gas chromatography and mass spectrometers (GC-MS).
The results of isolation obtained as much as 7ml, yield of 0.35%. Characteristic results obtained slightly greenish color, soluble in 95% ethanol (1:3). The results of the analysis using GC-MS obtained 34 chemical compounds which were detected.
The conclusions based on the data obtained that there are 8 components of the largest chemical compound namely: Linalool 1.10%, Beta-Myrcene 2.94%, l-phellandrene 3.93%, Trans-Caryophyllene 8.47%, Delta-3-Carene 14, 76%, Alpha-Pinene 17.48%, 2-Beta-Pinene 17.90%, 1-Limone 26.75%.
