Abstract

Formalin (formaidehide) is one of the substances that is prohibited in food. Formalin can also cause acute and chronic effects that can cause hypertension. Formalin is also often used to preserve salted fish. For this reason, the author feels it is important to do a qualitative test of formalin on salted fish sold in the Pringgan Market, Medan City. This type of research is descriptive with a laboratory approach. This study aimed to provide an overview of the object to be examined through sample data, then conduct analysis and make conclusions in general. The population in this study were all salted fish traders in the district of Medan Baru. Formalin examination results from 15 samples of salted fish sold at Pringgan Market were collected at different traders' places, for each sample, then a qualitative study was conducted using fehling A and B reagents and the test reactions result concluded that none contained formalin. The conclusion of the research that has been done is that no formalin was found in salted fish samples sold in the Pringgan Market, Medan City. It is suggested that people have to be careful about choosing salted fish and should not choose the cleaner and brighter one and also does not smell typical of salted fish
