Abstract

Nata is a fiber-rich product made from various media with sufficient requirements of carbon sources (5-10%), nitrogen (0.4-0.6%), pH (4.0-5.0) and temperature (28-31oC). Fructose can be added as carbon sources. Long fermentation can cause cellulose secretion of Acetobacter xylinum to bind strongly to each other to form layers that continue to thicken. Urea is a source of nitrogen in making nata and bean sprouts can also be used as a carbon source in making nata. Carbohydrate in watermelons can be used as an ingredients for nata. This study aims to determine the effect of fructose addition and fermentation time with bean sprouts as a source of nitrogen on the quality of nata de citrullus and at what concentration of fructose as a carbon source and how long fermentation time produces the best nata de citrullus.
The fructose concentrations used in this study were 2%, 4% and 6% with fermentation time of 11 days, 13 days, and 15 days by the Completely Randomized Design (CRD) method.
The results obtained that the manufacture of nata can be done by using watermelon juice by adding Acetobacter xylinum, vinegar, bean sprouts, and fructose to the watermelon juice through fermentation. The most optimal addition of fructose was 6% concentration with 15 days fermentation time to produce the best water content, fiber, yield, thickness and organoleptic color, aroma, texture and taste. The use of bean sprouts as a source of nitrogen in making nata de citrullus is better than urea.
