Abstract
The regulation of the Head of the Drug and Food Control Agency of the Republic of Indonesia number 16 of 2016 stated that the risk management of microbiology criteria that indicate the acceptance of a food or performance. Sanitation hygiene must be considered in carrying out good food sanitation starting from the process of selecting food ingredients, storing cooked food, transporting/distributing food, and serving food. Sanitation where food is sold must be kept clean and maintained together with traders, the public or buyers.
The study used qualitative design observations and in-depth interviews with informants. The data collection techniques were primary and secondary data. The processing of observation data compared with Kepmenkes No. 942/MENKES/SK/VII/2003 and regulation of the Head of POM No. 16 of 2016 concerning Microbiological criteria in processed food.
The results of the study found that from 30 laboratory test samples there were 2 samples that contained of Escherichia Coli bacteria on sweet of asam potong snacks in seller A with 28 MPN from a sample of 25 grams and sugar palm fruit sweet snacks from seller B with 20 MPN of 25 gr.
The conclusions in this study stated that hygiene of 6 sweets snacks seller at Pasar Ramai Medan did not use masks, aprons, gloves, headgear and special clothing. The place of 6 seller are open and close to the bathroom/toilet with damp and muddy floors. The results of laboratory tests done out as many as 30 samples there were 2 samples contained Escherichia Coli bacteria on sweets snacks
