Abstract

Coffee is one of the plantation commodities that plays an important role for the national economy, especially the source of income and the country's foreign exchange. Coffee contains active substances that provide many effects on humans, including increased endurance when doing physical activity. Caffeine is a type of alkaloid compound in coffee and tea. Caffeine is a mild stimulant which is often suspected as a cause of addiction. Objective: The purpose of this study was to determine the effect of immersion on caffeine content in coffee powder and caffeine content contained in coffee powder determined by ultraviolet spectrophotometry. Method: used the Ultraviolet Spectrophotometry method. This research used caffeine and chloroform (CHCl3) solvent. The method validation test was a repeatability precision test and statistical data analysis. Result: The maximum wavelength obtained from making a standard solution was at 274.00nm. The result of the validation of the precision test was .0014%, indicating that the precision value was good and the statistical data analysis of the sample data can be accepted because the t-value was smaller than t-table. Conclusion: shows test of the effect of immersion on caffeine levels in black coffee powder circulating in Medan City market by using the ultraviolet spectrophotometry method, soaking affects the caffeine content in each coffee powder.
